IMPORTANT SAFEGUARDS
When using electrical appliances, basic safety precautions should always be
followed, including the following:
1. Read all instructions before using the appliance.
2. Do not touch hot surfaces. Use the appliances handles or knobs. Use
oven mitts when touching the pan cover or steamer basket or taking out the
bread pan.
3. To protect against electrical shock, do not immerse power cord, plugs, or the
appliance in water or other liquid.
4. To prevent injuries or burns, do not insert your hand into the appliance or touch
moving parts when it is operating.
5. Close supervision is necessary when any appliance is used by or near children.
6. Unplug the appliance from the wall outlet after use and before cleaning. Allow
the appliance to cool before attaching or removing parts.
7. Do not operate any appliance with a damaged power cord or plug, or after the
appliance malfunctions, or after the appliance has been damaged in any
manner. Return appliance to the nearest authorized service facility for
examination, repair or adjustment.
8. The use of accessory attachments not recommended by the appliance
manufacturer may cause injuries.
9. Do not use the appliance outdoors.
10. Do not let the appliances power cord hang over the edge of a table or counter
or touch hot surfaces.
11. Do not place the appliance on or near a hot gas or electric burner or in a
heated oven.
12. Extreme caution must be used when moving an appliance that contains
hot liquids.
13. Do not use the appliance on an unsteady or cloth-covered surface. Allow
2 inches of space from the wall or other objects.
14. Do not block steam vents on the lid or vent openings on sides during operntion.
15. When using an extension cord, always attach the plug to the appliance first,
then plug the extension cord into the wall outlet. To disconnect, first turn any
appliance controls to OFF,then remove the plug from the outlet.
16. Do not use appliance for other than intended use.

This appliance has a a polarized plug (one blade is wider than the other). As
a safety feature, this plug will fit in a polarized outlet only one way. If the plug
does not fit fully in the outlet, reverse the plug. If it still does not fit, contact a
qualified electrician. DO NOT ATTEMPT TO DEFEAT THIS SAFETY FEATURE.
A short power-supply cord is provided to reduce the risk of becoming
entangled in or tripping over a longer cord.
An extension cord may be used if precautions are taken in their use.
If an extension cord is used:
(1) The marked electrical rating of the extension cord should be at least as
great as the electrical rating of the appliance, and
(2) The cord should be arranged so that it will not drape over the countertop
or tabletop where it can be pulled on by children or tripped over accidentally.

BREAD MAKING PROGRAMS
Your WelbilfID Bread & More has five separate bread making programs:
DOUGH
Choose the DOUGH program by pressing the BREAD TYPE button. The Bread
Machine will knead and rise the dough twice. At the end of the program, remove
the dough and hand-shape it according to your recipe. Bake in a conventional
oven. (Since the bread will not bake in the machine, no crust color selection is
necessary.) ~
FRENCH SETTING: 1112 LB., 2 LB. AND 2112 LB.
(Breads with crispier crusts and those that contain less sweeteners such as
French breads and Italian breads): Press BREAD TYPE to FRENCH. Choose either
the LIGHT, MEDIUM or DARK program when making bread automatically by
pressing the CRUST COLOR button. The Bread Machine will knead the dough
twice, rise the dough three times and then bake it to perfection.
RAPID SETTING: 1% LB., 2 LB. AND 2112 LB.
Press BREAD TYPE to RAPID. Choose either the LIGHT, MEDIUM or DARK
program when making bread automatically by pressing the CRUST COLOR
button. The Bread Machine will knead the dough twice, rise the dough three
times and then bake it to perfection. Breads made using this setting will be
shorter and more dense.
WHEAT SETTING: 1112 LB., 2 LB. AND 2112 LB.
Press BREAD TYPE to WHEAT. Choose either the LIGHT, MEDIUM or DARK
program when making bread automatically by pressing the CRUST COLOR
button. The Bread Machine will knead the dough twice, rise the dough three
times and then bake it to perfection.
Note: When using the wheat setting, add 30 minutes to the total time by setting
the programmable timer for 30 minutes (See page 15). This will allow your
ingredients to rest before kneading begins and will give you better bread results.
BASIC SmING: 1112 LB., 2 LB. AND 2112 LB.
Press BREAD TYPE to BASIC. Choose either the LIGHT, MEDIUM or DARK
program when making bread automatically by pressing the CRUST COLOR'
button. The Bread Machine will knead the dough twice, rise the dough three
times and then bake it to perfection.

COOKING PROGRAMS
Your Welbilfl' Bread & More has five additional cooking programs:
1. JAM, PUDDING, SAUCE & CANDY:
During this program, your machine will pulse stir while cooking. Press COOKING
PROGRAM button to select the program. Use the UP and DOWN buttons to set
the cooking time from 15-60 minutes, in 5-minute increments. Always use the
blade for this program. The pan cover mayor may not be necessary. See specific
recipe for instructions.
2. STEAMING:
Use this program to steam vegetables and more. No stirring action takes place.
Press COOKING PROGRAM button to select the program. Use the UP and
DOWN buttons to set the cooking time from 10-60 minutes, in i-minute
increments. Always use the cover when steaming. Do not use the kneading
blade.
3. SOUP & RICE:
Use this program to prepare soups and rice. The machine will stir ingredients for
10 seconds every 5 minutes while cooking. Press COOKING PROGRAM button to
select the program. Use the UP and DOWN buttons to set the cooking time from
15-90 minutes in 5-minute increments. Always use the pan cover for this
program.
4. SPREAD & DIP:
Use this program to blend specialty flavored butter, spread and dip. The machine
will continuously stir ingredients. No heating action takes place. Press COOKING
PROGRAM button to select the program. Use the UP and DOWN buttons to set
the cooking time from 5-30 minutes, in 5-minute increments. Always use the
kneading blade for this program; the pan cover is not required.
5. SLOW COOKING:
Use this program for a variety of slow-cook dishes, such as stews and sauces.
The machine will stir ingredients for 10 seconds every 15 minutes while cooking, if
the kneading blade is used. Press COOKING PROGRAM button to select the
program. Use the UP and DOWN buttons to set the cooking time from 4-10
hours, in 30-minute increments. Use the kneading blade in recipes that require
gentle stirring or ingredients to be broken up during cooking. Always use the pan
cover for this program.

SAFETY AND ENJOYMENT TIPS
1. The baking chamber and lid of the machine become extremely hot during
bread baking and cooking programs. Always use a kitchen mitt or pot holder
when touching these parts.
2. Do not operate this appliance on the same circuit as other high
wattage appliances.
3. Position the machine at least 4 inches from the front of the counter or
working surface. Do not place any flammable materials or objects on top of
the appliance when plugged in or during operation.
4. Do not use the machine near any electrical equipment like radios, TVs, or
stereos since poor reception may occur.
5. Always use the machine on a clean, dry work surface away from exposed
elements, direct sunlight, or other sources of heat and cold.
6. Only use the machine on a non-flammable work surface or counter. Never
use on floor or on carpeting or on top of any cloth objects like tablecloths
or placemats.
7. Never stick your hand or any kitchen utensils into the pan during operation.
8. Do not use any accessories or attachments not included or recommended
by Welbilt".
9. Do not put any components in the dishwasher.
1O. Do not attempt to tamper with or make any adjustments to the electrical
components or parts.
11. Do not use this appliance other than for its intended use.
12. When handling hot bread pan, kneading blade, steaming basket or pan cover,
use caution and always use kitchen mitts. Some surfaces are very hot.
13. When using cooking programs that require the pan cover, use caution when
removing this cover. Lift the cover away from you to allow hot steam to
escape.
14. Never use metal utensils in the bread pan as they may scratch the nonstick
surface.
15. DO NOT allow ingredients to boil over the pan into the baking chamber.
Should this happen, stop the machine immediately. Allow to cool and clean
thoroughly.
16. A second bread pan and kneading blade will reduce the washing and wearing
associated with heavy usage. Additional parts may be ordered; see page 45.
