For a 1995–2007 Fiat Scudo, the recommended power steering fluid is Petronas Tutela GI/E, or any equivalent fluid that meets the same spec, typically CHF 11S or synthetic-based hydraulic fluid compatible with European systems.
If you're topping it up and not doing a full flush, try to match what's already in the system to avoid mixing different fluid types. Also, check the cap or owner's manual (it sometimes lists the exact spec right there).
And yep, the service manual you're looking at includes steering system servicing procedures if you need to bleed it or check for leaks.
